Ingredients

1½ lbs750 g4 Traditional Steaks (Rib Eye, Strip Loin or Tenderloin)
4 tsp20 mLfinely ground coffee (optional)
4 tsp20 mLfreshly ground black pepper
2 tsp10 mLground cumin
Salt to taste


Directions

Preheat barbecue or broiler. Meanwhile, combine coffee, pepper, cumin and salt in large resealable freezer bag. Shake each steak separately in bag until evenly coated. Grill, broil or pan-fry steaks for 5-6 minutes per side or until cooked to desired doneness.


TIP: The coffee in this recipe beautifully balances out the other flavours; however, if you think it's too unusual, it can be omitted.

Ingredients

1½ cups375 mLbeer (ale or lager)
33garlic cloves, minced
¾ cup175 mLketchup
1/3 cup75 mLEach balsamic vinegar and brown sugar
3 tbsp45 mLEach Dijon mustard and chili powder
4 lb2 kgTraditional Sirloin Tip or Inside Round Beef roast


Directions

Combine all ingredients (except beef) in large sealable freezer bag. Pierce roast all over with a fork. Add roast to bag and refrigerate for 12 to 24 hours. Discard marinade.

To cook on a rotisserie, place drip pan with ½ inch (1 cm) water under grill. Using medium-high heat, preheat barbecue to 400°F (200°C). Insert spit rod lengthwise through centre of roast; secure with holding forks. Insert meat thermometer into middle of roast avoiding spit rod. Maintaining constant heat, cook roast over drip pan in closed barbecue to desired doneness: 140°F (60°C) for medium-rare; 155°F (68°C) for medium. Remove roast to cutting board; tent with foil for 10-15 minutes to allow temperature to rise an additional 5°F. Carve into thin slices to serve.


TIP: No Rotisserie? No Problem! Place roast on grill over drip pan on one side of the barbecue. Turn heat off just under the roast and cook as above.

Ingredients

1½ cups375 mLHoney mustard or honey garlic BBQ sauce
2 tsp10 mLChili powder
1 lb500 gTraditional Top Sirloin Grilling Steak, cut into 1" cubes
½ lb250 gEach White or brown mushrooms and cherry tomatoes
1 each1 eachRed and green peppers


Directions

In medium bowl mix BBQ sauce and chili powder. Set aside about ½ of sauce. Add beef cubes to remaining sauce in bowl, turning to coat. While cubes are marinating, halve, seed and cut peppers into 1½ inch (4 cm) pieces. Alternately thread beef cubes and vegetables onto metal skewers or soaked wooded skewers. Brush vegetables with reserved sauce and place kabobs on greased grill or under broiler. Close lid and cook for about 10-12 minutes until vegetables are tender and meat is medium rare. Turn kabobs occasionally and brush generously with reserved marinade throughout cooking.

Ingredients

1 lb500 gTraditional Ground Chuck
½ cup125 mLquick cooking rolled oats
¼ cup50 mLlight sour cream
¼ cup50 mLfinely minced brown or white button mushrooms
11medium onion, finely diced
33garlic cloves, minced
1 tbsp15 mLDijon mustard
1 tbsp15 mLchopped fresh parsley (or 1 tsp/5 mL dried)
1 tsp5 mLeach dried oregano and thyme
¼ tsp1 mLsalt and fresh cracked pepper


Directions

In large bowl, combine beef with remaining ingredients. Mix thoroughly. Shape into 4 to 6, ½ to ¾-inch thick (1-2 cm) patties. Lightly oil grill. Barbecue, broil or pan-fry using medium-high heat for 5 to 7 minutes per side (turning once) until instant-read thermometer inserted sideways into centre of patties reads at least 160°F (70°C). Serve on whole wheat buns, topped with tomato, lettuce & grilled onions.
